'Up' is an arbitrary idea
I like this map with south at the top and north at the bottom. When you think about it, the decision to do it one way or the other is arbitrary from the perspective of someone on the planet. (Click on the map for a larger view.)

WorldMapper
"Worldmapper is a collection of world maps, where territories are re-sized on each map according to the subject of interest.
There are now nearly 600 maps."
This map shows refugee origins: countries that more people try to escape from are shown larger. Not too many people are refugees from Canada, the USA, or Mexico, so North America appears as a spidery line. Some tiny countries in the Middle East and Africa are huge.
